Cheddar Beer Bread

Ingredients: 
3 cups unbleached all-purposed flour
1 Tbsp aluminum-free baking powder
3 Tbsp organic cane sugar
1 tsp fine sea salt
1 cup Daiya cheddar style shreds
1 - 341 ml bottle of beer, room temperature (lager or light ale)
2 Tbsp vegan margarine, such as Earth Balance, melted
Instructions: 

- Pre-heat oven to 375 F. Spray 9”x5” loaf pan with cooking spray and set aside.

- Mix flour, baking powder, sugar and salt in large bowl until combined. Stir in cheese.

- Add beer and stir just until batter is moistened. Do not overmix – batter will be lumpy.

- Spread batter in loaf pan and pour melted margarine evenly over top.

- Bake loaf for 35-40 minutes until golden brown and toothpick inserted in center comes out clean.

- Cool loaf in pan for 10 minutes before transferring to wire rack. Cool completely before slicing.

Daiya No-Bake Cheesecake

Ingredients: 
Prepared crust of your choice (either store-bought or homemade)
3/4 cup coconut butter (a.k.a coconut manna)*
4 tbsp. water
3 tbsp. lemon juice
3 tbsp. natural vanilla extract (clear or white is best but regular vanilla extract can also be used)
2/3 cup sugar
2 containers Daiya Plain Cream Cheese Style Spread
4 tbsp. coconut oil
*Note: Coconut butter, also known as coconut manna, can be found in many grocery stores in the nut butter aisle. It is not the same thing as coconut oil.
Instructions: 

This makes a 10inch cheesecake in a springform pan. 

1) In a blender or food processor, add the coconut butter, water, lemon juice, vanilla, and sugar. Blend until completely smooth (about 2 min.)

2) With an electric beater, whip the Daiya Plain Cream Cheese Style Spread until smooth. Add the smooth coconut butter paste and beat until fully incorporated.

4) Melt the coconut oil and pour into the cream cheese mixture. Beat until fully combined.

5) Spread onto prepared crust and let sit covered in the fridge for at least 3 hours.

Optional: Top the cheesecake with fresh berries, chocolate, or any other topping you desire!

Great American Veggie Burger

Ingredients: 
1 can of organic red kidney beans, rinsed
1/4 cup organic all purpose flour
1/4 cup crushed raw walnuts
2 teaspoons rubbed sage
1/2 teaspoon salt
1/2 teaspoon seasoned salt
1 garlic clove
Oil for frying
1 package of Daiya Cheddar Style Slices
Sesame seed hamburger buns
Toppings & condiments of your choice
Instructions: 

1. Time to get out your food processor! Throw in the beans, flour, walnuts, garlic, and seasonings.

2.Mix on a puree setting till it looks like a reddish dough. 

3. Grab hunks of the mixture and form each one into a burger patty. 

4. Add oil and sprinkle some salt in the pan. On medium heat, fry the bean patties till they are golden brown on each side. Then add a slice or two of Daiya on top of each patty and cook till melted. 

Award-winning Aurora Borealis Dessert Grilled Cheese

Ingredients: 
2 slices thick rustic sourdough bread
2 tbsp maple syrup
2 tbsp dairy-free butter
3 tbsp Daiya Mozzarella Style Shreds
3 tbsp dairy free Cream Cheese
1/2 peach, peeled and soaked in a combo of 50/50 brandy and simple syrup
1 pound of berries
1/4 cup sugar
1/4 cup orange juice
Instructions: 

Berry Reduction Sauce:

Mash berries with sugar and juice and let set for at least an hour.
Pour berry mixture into a small pot, place over low heat, and lightly simmer for 20-30 minutes, or until liquid has reduced by almost half.
Strain out large bits and seeds (optional) and refrigerate in a glass jar (keeps for about a week).

The Sammich:

Melt one tbsp of butter and maple syrup in a nonstick frying pan over medium-high heat.
Drop one side of the bread into mixture and remove. Then add another tbsp of butter and syrup in the pan and place the dry side of the bread into the mixture.
Leave the bread on the heat and grill until the sugar has caramelized and is golden brown.
Flip the bread and immediately add the Daiya cheese on ONE slice of the hot side of the open bread and smear the cream cheese on the other slice of hot bread.
Slice the peach and stick onto the cream cheese.
Stick the two open sides of bread together and continue to grill, flipping once, until both sides are crispy and middle is hot.
Cut in half and drizzle with Berry Reduction.

Guacamole & Pepperjack Stuffed Mushrooms

3-4 as an appetizer

25-35 minutes
Ingredients: 
1 ripe avocado, halved, pit removed and scored cross-wise
2 tbsp. salsa
8 oz. button mushrooms or baby bella mushrooms, stems carefully twisted off
small handful daiya pepperjack shreds
oil for drizzling (optional) olive, coconut, truffle or grapeseed
hot sauce and/or cilantro for serving (optional)
Instructions: 

- preheat oven to 350 F
- make 'quickie guacamole' using avocado and prepared salsa
- arrange mushrooms, stems removed, hole side up on a baking sheet, stuff with guac, then top with pepperjack daiya and drizzle with oil if you like
- bake for 20-25 minutes, for extra crispy daiya cheese, turn the broiler on high and broil for about 5 minutes
remove from oven and top with hot sauce and sprinkle with cilantro

Let them cool a little before eating or you will burn your mouth…I know it will be hard, but wait…trust me, I know this from experience.
