Mock Tuna Melts

These sandwiches are quick and easy! We love to eat them on road trips and on picnic!!

Ingredients: 
1 can (19 oz) of chick peas rinsed and drained
1 Tbsp parsley (fresh or dried)
2 onions, chopped
1/4 cup nutritional yeast flakes
1/2 tsp celery salt
2 tsp of Braggs liquid soy
1 c. vegan mayonnaise
4 whole wheat pitas
1 package of Daiya cheese
Instructions: 

Preheat oven to 350 degrees F.
Blend the following ingredients with hand blender until creamy: chick peas, parsley, nutritional yeast, celery salt, Braggs, and mayonnaise
To this mixture add the chopped onions; Cut Pitas in half then spread the mock tuna on the pita, top pita off with Daiya cheese, bake in oven for about 10 minutes (or until "cheese" is melted).
