Potatoes Au Gratin

Servings:
4 Ingredients:
3 - 4 medium potatoes, peeled and sliced thin
2 Tbsp butter alternative or olive oil
1/2 cup Daiya Mozzarella Style Shreds
1/2 cup Daiya Cheddar Style Shreds
Salt & pepper to taste
1/2 cup milk (alternative - almond, soy or hemp milk)
Parsley for garnish
Instructions:
Preheat oven to 400 degrees and prep the ingredients.
Slice the potatoes thinly. Rub casserole dish with the butter or olive oil in order to stop the potatoes from sticking. Cover the bottom of the dish with potatoes overlapping slightly. Add salt and pepper to taste, cover with 1/4 Daiya.
Repeat until you have used up all your potatoes slices. Pour the milk on top, cover with foil and put in the over to bake for 25 minutes.
Remove from oven, uncover the potatoes, add remaining Daiya, then bake for 15 - 20 more minutes.
Sprinkle with parsley and let sit for 5 minutes before serving.
