Vegan Spinach Cheese Balls

One of my favorite appetizers to make before I switched to vegan was Betty Crocker's Spinach and Cheese Balls. I made this adaptation from it, and my family members who have made fun of my eating habits love these!

Ingredients: 
1 cup pancake mix
2 cups shredded Daiya mozzarella cheese
1 pkg. frozen chopped spinach, thawed
1 tbsp. ground flaxseed + 3 tbsp. water, combined in a separate bowl
1 tsp. garlic salt
1 tsp. onion powder
1 tsp. italian seasoning
1 tsp. ancho chili powder (optional)
Instructions: 

Preheat the oven to 400 degrees. In a bowl, combine ground flaxseed and water, and mix to combine. Combine all other ingredients in a bowl, including flaxseed mixture. If using a stand mixer, put on speed 4 and mix until combined well. I wouldn’t really suggest a hand mixer. I would consider using a spoon + your hands. Grease a baking sheet with a spray oil. Break the dough apart in your hands and roll the dough into small balls, about 1/2” in diameter. This should make 30 balls. Put into the oven and bake 10-15 minutes, or until the bottoms are golden brown. Serve with warm marinara or vegan ranch dressing (or both!).
